It’s so easy right?  The recipe specifies Pork.  But… what do you get?  There is a huge variety of Pork cuts – and to make it more confusing, we at Palmdale Village Meats have even more treats in store for you – seasoned pork, stuffed fillets etc….

What’s more, Pork isn’t consistent around the (other) shops and supermarkets, giving varying results in your cooking.

Extra Pork Rind

I don’t want this bit hidden down the bottom of this post… Way too important 🙂 so here it is at the very top.  If you want to buy extra pork rind, you can!  Just think!  Enough crackling to satisfy everyone. Here’s how to cook it.

No need to get a roast, just buy the Pork Rind – We have a customer who crisps up a heap of Pork rind for snacks.

Pork Scotch Fillet (Pork Neck)

Beautiful for slow cooked roasts. No rind, so lovely and lean

Exceptional for Pull Apart Pork recipes. Pulled Pork can be used in pie recipes, Mexican recipes, wraps, Asian recipes, salads.  Just cook slowly, and shred with a couple of forks.

Cut the fillet into steaks and…. Pan fry like a lean steak.  Great and quick on the BBQ. Grill

Rolled Pork Shoulder Roast

Cook this just like you would a normal roast. Crisp up the top of the rind if you like.  The rolled shoulder is a little more forgiving, time/temp wise, because it is rolled with the rind. It keeps the roast beautifully moist, so slow cook or higher as per normal roasting.

On request, you can get unrolled Pork shoulder which is is great for curries and soups.

Rolled Loin Roast

This is a much leaner roast than the shoulder – and while not really good for slow cooking… it’s a magnificent roast cooked as you would a normal roast.

Pork Belly Roast

Only two words for this… absolutely delicious.  This is the easiest roast, with deliciously tender meat. This is great for beginners to roasting as well as seasoned cooks.

Pork Fillets

This is a quick cook meat. Lovely and lean, incredibly versatile.  Pork Fillet lends itself to just about anything you want to make.

If your recipe doesn’t actually specify what sort of Pork you need – your first option is to ask the very accommodating people at Palmdale Village Meats, Poultry and Seafood, they know their meat.  Not just the cut, but how it should be cooked, how long, how much you need per individual and how hot. Your second option…. is to go with Pork Fillet.

  • Roast – it makes for a lovely lean roast
  • Stir Fry – browned and with some veggies, or with a sauce
  • Quick wet meals – wonderful for quick cook meals like Moroccan Casseroles – or try pork as a substitute in traditional meals like Stroganoffs or Curries.
  • Absolutely perfect for Asian style cooking

Stuffed Pork Fillet

This is one of our most popular mini roasts!  Filled with a minced mix of Date, Apricot and Pistachio – then wrapped in our Palmdale Redgum Smoked Speck – it is flavoursome and easy to cook.  Totally Gluten Free and Nitrate free with no waste.

The Stuffed Fillets are very economical and is easy to cook. Want to impress, or just having a lovely meal at home, these are perfect.  They range from 350-400g

each, which will serve 1-2 people depending on appetite. Cheaper than most fast foods – and will actually take less time to cook than most foods take to deliver!

To cook, roast in an oven, 180oC for 35 minutes.  John’s recommendation for a delicious gravy is to mix some Hummus with a little chicken stock, warm it up – thicken it if desired – absolutely delicious!  Serve with Rice, Cous Cous, Potatoes, Oven Chips/Wedges – or try our Mashed Cauliflower recipe.

Moisture Infused Pork Loin Steak

Absolutely fool-proof steak!  It would take, practically, dropping it INTO a fire to ruin it.  The steak is gently infused with a VERY light brine – yup, only brine, no nasties – to make it so easy to cook, a child could do it…. but please – “Child” is a figure of speech, keep the cooking to the adults.

Pork Loin Chops

People might wonder why you would go to a quality Butcher like Palmdale, than make a quick grab at the supermarket. Easy – consistently fabulous results for your cooking. This is because we source the very best meat.  And also… the little things that make all the difference.  Like, making sure that our chops are well trimmed!

 

American Baby Back Ribs

We think these are the pork items LEAST likely to need explanation!  Absolutely delicious slow cooked, messy – finger lickingly fabulous.  As for recipes – there are more recipes than there are ribs in the world to eat, select your favourite.  Sweet – savoury – salty – spicy, there isn’t a wrong type.

Pork Mince

While Beef mince or Chicken mince are commonly thought of when you come to recipes such as Pasta sauces, Meatballs or Sausage Rolls – to mention a few – Pork Mince, either by itself or in combination with Beef or Chicken, will give your mince dish an extra special ZaZoom!
