Palmdale Gourmet Lime Steak Bites

This is a great, quick cook, amazingly delicious, quite fancy – and yet easy – recipe.

The Steak Bites can be eaten hot with salad, rice, steamed veggies or a potato mash – or have them cold in a salad and use the sauce as the salad dressing.  How delicious would it be with avocado, cherry tomatoes, pomegranate seeds, baby spinach, snow peas and corn kernels…. yum!

Eaten either hot or cold. The bites would be a magnificent entree, served with olives, grilled haloumi, pickles, fresh or dried dates and/or figs and flat bread – using the sauce to dip in.

Palmdale Gourmet Lime Steak Bites

Serves 4


  • 800g Steak, cubed.
    Which Steak?

    • Beef: Sirloin, Fillet, Rump
    • Pork: Filet, loin steak
    • Chicken: while obviously not a steak – thigh or breast would be delicious
  • 1 teaspoon of fine salt
  • 1 teaspoon of ground pepper.
  • 1 teaspoon of finely minced garlic (or ground Fennel)
  • 4 tablespoons olive oil (you may need a touch more)
  • 2 tablespoons raw honey
  • 4 tablespoons sweet chilli sauce (try marmalade if you don’t like chilli)
  • 4 limes, zested and juiced


  1. Have the guys at Palmdale Meats chop your preferred meat into cubes for you before you  leave the store.
  2. If possible, bring your steak to room temperature first.
  3. Put your steak cubes into a bowl.  Add the salt and pepper (and ground dried fennel if you are using that)
  4. Stir to coat the meat well.
  5. Mix the honey, garlic and sweet chilli sauce (or marmalade) and then place in with the steak.  Stir again to coat all the pieces of meat well.
  6. Set aside
  7. Zest and juice the lime – put them into a jug or glass and set aside ready to grab at the end of the cooking process.
  8. The cooking will only take a few minutes.  Have your salad and/or veggies well underway
  9. When you are ready to cook, heat your microwave by setting a cup of water in the centre and cooking for 3 minutes
  10. Heat a medium frypan on high. Don’t be tempted to use a large frypan, as a good portion of your steak will overcook before you have a chance to turn your meat over.
  11. Add 2 tablespoons of the olive oil in, when it is hot, add half of the steak in a single layer, without crowding (1/3 of the steak if you can only fit that in in a single layer).  You should immediately hear a satisfying sizzle.
  12. Turn the steak, quickly, after 60 seconds (90 seconds if you are using chicken)
  13. Cook the other side for 60 seconds (90 for chicken) and pop on a plate.
  14. Put the plate in your warmed microwave (take cup out before putting meat in), Your microwave is so well insulated, it will keep your meat warm while you continue
  15. Repeat steps 10-13 until all your meat is cooked.
  16. While your meat is being kept warm in the microwave, turn down the heat under the frypan to medium and add the lime juice and zest.
  17. Stir gently, but well, to allow the juice to take up all the flavour left behind by the other ingredients.  Use this deliciousness either as a Gravy, a Dipping Sauce or a Dressing.

As mentioned above – these are great as an entree – hot or cold – served with other tasty nibbles. Great – hot or cold – in a salad. Or WITH a salad. Over rice or steamed veggies.
